The State of Puebla is noted for its wonderful cuisine. Many claim that it is the birthplace of Mexican gourmet cooking.
The food culture of the state of Puebla is known as Cocina Poblana and is popular all over Mexico. Puebla is considered the home of Mole poblano, a rich, spicy sauce containing chocolate, cinnamon and nuts, as well as different types of hot peppers. Served with chicken, mole has become the most renowned dish of Puebla's cuisine. Camote, sweet potatoes cooked in a stove and topped with creme are a traditional candy. Rompope is a liquor based on egg yolk and vanilla, created many years ago by Puebla's nuns. Chiles en nogada is a dish of poblano peppers stuffed with apple, pear, pineapple, peach, almond, ground pork, tomato, onion and garlic and topped with sweet walnut sauce, parsley and pomegranate seeds. It is prepared mainly in August, during walnut harvest season. It was first made to celebrate Agustin de Iturbide and the signing of the Treaty of Cordoba that granted Mexicos Independence, which is why it is always green, white and red. The Chalupa, a small tortilla topped with salsa, chopped onion and meat; and widely known in Mexico as fast food is also from the city. Other traditional sweets include the sweets from Santa Clara (dulces de Santa Clara), crystallized fruits, and milk candies.

Chiles en Nogada
Another Puebla creation, this tasty dish is made by stuffing chile poblanos with a zesty mixture of chopped meat, fruit, and nuts. This is smothered with a white cream sauce and crowned with a sprinkle of vivid red pomegranate seeds and green parsley to make it MEXICO'S colors.

Dulces de Santa Clara
These are wonderful treats. They are crystallized fruits and milk chocolate. Around Dia de los Muertos sugar skulls and other special candy treats are availble for people to put into alters in everyones homes. These will be around durring the wedding because Dia de los Muertos is one week after the wedding.
